My mom is a beautiful person inside and out. She’s kind, giving, loving, funny, and gorgeous but doesn’t even know it. She’s always been such a shining example for my three sisters and me and I can’t tell you how grateful I am to have her as my mom. She’s the best!
For her birthday yesterday I made her this Italian Cream Cake from The Pioneer Woman. This cake is deliciously moist, decadent, creamy, and oh so good. It has coconut, pecans, walnuts, and cream cheese frosting. It was the perfect cake for the occasion! My mom loved it.
I pretty much followed the recipe exactly. The only things I did differently/changed was I used a little less powdered sugar in the frosting (so it wasn’t too sweet) and used half walnuts, half pecans for the top. I also toasted the coconut that I used as a topping along with the nuts. These little changes served to emphasize the flavor already in this amazing cake!
