Cinnamon-y cookie bars with pumpkin cheesecake-inspired frosting!
  • 1⅓ cup all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • 2 tsp cinnamon
  • ¼ cup (1/2 stick) salted butter, softened
  • ¼ cup + 2 tbsp cup white sugar
  • 2 tbsp powdered sugar
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp sour cream
  • ¼ cup (1/2 stick) salted butter, softened
  • 2 oz. cream cheese, softened
  • 3 tbsp pumpkin puree
  • 1 cup powdered sugar
  • ½ tsp vanilla
  1. Preheat oven to 350 degrees F. Whisk together flour, salt, baking powder, and cinnamon in a medium sized bowl and set aside.
  2. With a mixer combine butter and sugars until fluffy (about 3 minutes). Pour in vanilla, eggs and sour cream and mix until combined. Then pour dry ingredients in this bowl and stir again until combined.
  3. Place mixture in a buttered 8x8 greased/lined pan. Bake for 12-14 minutes or until just set and lightly browned. Don't overcook!
  4. For frosting, combine butter, cream cheese, and pumpkin in large bowl and beat with a mixer for 2 minutes, or until fluffy. Add powdered sugar and vanilla and beat again. Top bars with frosting and ice with piping bag if desired! Enjoy. :)
