Snickerdoodle Bars with Pumpkin Cream Cheese Frosting

Ingredients

SNICKERDOODLE BAR:

  • 1 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 cup 1/2 stick salted butter, softened
  • 1/4 cup + 2 tbsp cup white sugar
  • 2 tbsp powdered sugar
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp sour cream

PUMPKIN CREAM CHEESE FROSTING:

  • 1/4 cup 1/2 stick salted butter, softened
  • 2 oz. cream cheese softened
  • 3 tbsp pumpkin puree
  • 1 cup powdered sugar
  • 1/2 tsp vanilla

Instructions

  • Preheat oven to 350 degrees F. Whisk together flour, salt, baking powder, and cinnamon in a medium sized bowl and set aside.
  • With a mixer combine butter and sugars until fluffy (about 3 minutes). Pour in vanilla, eggs and sour cream and mix until combined. Then pour dry ingredients in this bowl and stir again until combined.
  • Place mixture in a buttered 8x8 greased/lined pan. Bake for 12-14 minutes or until just set and lightly browned. Don't overcook!
  • For frosting, combine butter, cream cheese, and pumpkin in large bowl and beat with a mixer for 2 minutes, or until fluffy. Add powdered sugar and vanilla and beat again. Top bars with frosting and ice with piping bag if desired! Enjoy. :)
