Cream butter, coconut oil, and 1 cup of the sugar together for 5 minutes, or until light and fluffy. While the butter is mixing, whisk together the dry ingredients and set aside.
Add the eggnog, egg, and vanilla and beat until well combined.
Add the dry ingredients to the wet ingredients and mix until smooth.
Roll dough into balls, then into a bowl with 2 TB granulated sugar. Place on cookie sheet covered with parchment paper or a silicon sheet.
Bake at 350 degrees F for 8-10 minutes. Allow cookies for to cool for 2 minutes on your cookie sheet, then move to a cooling rack to finish cooling.
