Eggnog Sugar Cookies

Ingredients

  • 1/2 cup 1 stick butter
  • 1/4 cup coconut oil
  • 1 cup plus 2 TB sugar
  • 1/4 cup eggnog
  • 1 egg
  • 1 1/4 tsp vanilla
  • 2 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp cream of tartar
  • 3/4 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger

Instructions

  • Cream butter, coconut oil, and 1 cup of the sugar together for 5 minutes, or until light and fluffy. While the butter is mixing, whisk together the dry ingredients and set aside.
  • Add the eggnog, egg, and vanilla and beat until well combined.
  • Add the dry ingredients to the wet ingredients and mix until smooth.
  • Roll dough into balls, then into a bowl with 2 TB granulated sugar. Place on cookie sheet covered with parchment paper or a silicon sheet.
  • Bake at 350 degrees F for 8-10 minutes. Allow cookies for to cool for 2 minutes on your cookie sheet, then move to a cooling rack to finish cooling.
