In your food processor, add the nuts, cocoa powder, and pulse into fine crumbs, about 15 seconds. Do not over-process. (You don’t want it to turn into nut butter!)
Add the dates, vanilla, and process until mixture begins to combine. Add maple syrup, one tablespoon at a time, pulsing to incorporate after each addition. The consistency is right when the dough combines into a ball. It should be sticky, but not wet. (Dough that resembles the consistency of nut butter is too runny - add a tablespoon or two more cocoa powder or cashews, as necessary, to dry out the dough. If the dough is too dry or sandy, add a couple dates or tablespoon more of maple syrup to moisten it.)
Transfer dough to a plate or bowl, cover with plastic wrap, and refrigerate for at least 2 hours. When chilled, roll into balls. If you want, roll balls into sprinkles.
Store bites in the refrigerator. Keep for up to a month in the fridge, or will keep longer in freezer if preferred. Enjoy!
