Yes and yes and yes.
These are perfect for parties because they’re adorable, quick, and a crowd-pleaser. They’re great for when you have a sweet tooth and want something quick and satisfying. They’re amazing to bring with you to picnics or potlucks. Basically, this is an awesome recipe for any occasion!
My favorite part of these bars is the mix of textures. The sugar cookie is a little dough-y and tastes like vanilla heaven. Add in the whipped buttercream and that gives it a smooth, creamy layer. The sprinkles have that slight crunch and together these three components make a perfect bite! These bars really remind me of those frosted sugar cookies you get at the grocery store. If you like those, you will LOVE these.

Frosted Sugar Cookie Bars
Ingredients
BARS:
- 1/2 cup salted butter softened
- 1 cup granulated sugar
- 1 large egg
- 2 tablespoons sour cream
- 1 1/2 teaspoon vanilla extract
- 2 1/3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
FROSTING:
- 1/2 cup salted butter softened
- 1 1/2 cups powdered sugar
- 2 tablespoons heavy whipping cream
- 1 teaspoon vanilla extract
Instructions
FOR THE BARS:
- Preheat oven to 375°F. Line an 11×7 baking pan with foil and grease with butter.
- Beat butter and sugar for until light and fluffy, about 2 minutes. Add egg, sour cream and vanilla and beat until thoroughly combined. The mixture might look slightly curdled, that’s ok!
- In a separate bowl, combine flour, baking powder and salt. With your mixer on low, add flour to the butter mixture, mixing until just combined.
- Place the dough into the prepared pan and use your fingers to evenly press it into the pan.
- Bake for about 15 minutes, until the top appears dry and the edges are just starting to turn light brown. Make sure not to over bake! Cool the bars completely before frosting them.
FOR THE FROSTING:
- Beat butter and powdered sugar for several minutes until light and fluffy.
- Add heavy whipping cream and vanilla and beat for several more minutes. Use an offset spatula or butter knife to spread the frosting over the cooled bars. Top with sprinkles and slice into squares. Enjoy!

These look so good! Do you have to use buttercream, or can you switch the type of frosting used?

Thanks, Alysha! You can use any frosting you’d like, I use buttercream only because I want it to taste similarly to the store-bought frosted sugar cookies. I was thinking a cream cheese frosting might be a good idea for this one though! Or whatever you’d like, really. What were you thinking? 🙂
