Russian Coconut Green Tea Cakes

Russian Tea Cakes. Mexican Wedding Cakes. Snowball Cookies. Whatever you may call them, these cookies are a holiday classic. Around Christmas, I probably eat at least half a dozen. Definitely a favorite.

I decided to put a “spring-y” spin on the traditional Russian Tea Cake by adding green tea and coconut. The result was delicious! These cookies just melt in your mouth. I am really excited to share this recipe with you!

Also, they’re perfect in time for St. Patrick’s Day!

Russian Coconut Green Tea Cakes
Makes 24 cookies

Ingredients
1/2 cup (1 stick) butter, softened
1/2 cup coconut oil
1 tsp. vanilla extract
1 tsp. coconut extract
1/4 cup + 2 TB powdered sugar
2 TB matcha green tea powder
2 cups all purpose flour
1/2 cup walnuts, chopped
1/2 cup pistachios, chopped
1/4 cup + 2 TB powdered sugar for decorating
1/4 cup coconut powder for decorating
Directions

Preheat oven to 350ยบ F.
In mixer, cream butter, coconut oil, and both extracts until smooth.
In another bowl, combine powdered sugar, green tea powder, and flour. Stir into butter/coconut oil mixture until just combined. Mix in the nuts.

Roll into 1 inch balls or scoop with cookie scooper. Place 2 inches apart on a cookie sheet. 

Bake for 8 minutes. You want them to be slightly undercooked; this will give an amazing melt-in-your-mouth texture.

Mix the powdered sugar and coconut powder in a bowl. While still warm, roll the cookies in powdered sugar mixture. If you want, when they’re fully cooled you can roll them in the sugar again.

    Is coconut powder the same as coconut flour? Or could you just grind some coconut into powder?

      Hi Suzan!

      Coconut flour is much finer than coconut powder. Powder is more like grounded coconut. You can definitively grind/finely chop some coconut into a powder yourself instead of buying! I do it all the time.
