These fluffy yet decadent pancakes make the perfect brunch for chocolate lovers.
Recipe type: Brunch
Serves: 10-12
Ingredients
  • PANCAKE BATTER:
  • 1¼ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 2 tsp. baking powder
  • ¼ cup sugar
  • 3 tbsp. salted butter, melted
  • 1 tsp. vanilla extract
  • 1¼ cup milk
  • 1 large egg, beaten
  • ⅓ cup chocolate chips, roughly chopped
  • Powdered sugar, for dusting
  • CHOCOLATE GANACHE SAUCE:
  • ¾ cup heavy whipping cream
  • 1 tsp. salted butter
  • 1 cup chocolate chips
Instructions
  1. In a medium bowl, whisk flour, cocoa powder, baking powder, and sugar together. Add melted butter, vanilla, milk, and beaten egg and whisk until just combined. The batter should be lumpy. Gently stir in roughly chopped chocolate chips.
  2. Heat griddle over medium heat and lightly grease with butter. Using a ΒΌ-cup measuring cup, scoop batter onto griddle. Cook until pancakes have bubbles on the top, then flip them over and cook for 1 minute. Repeat with the remaining batter. Serve warm with powdered sugar and chocolate ganache sauce!
  3. For Chocolate Ganache Sauce: Heat heavy cream and butter in a small saucepan until just about to boil, stirring frequently so it doesn't get a "film" on the top. Remove from heat and pour over chocolate chips in a small bowl. Let rest for a minute, then stir until completely combined. Drizzle over pancakes. Enjoy!

Yummy! Don’t these look decadently tasty!? Gotta love a fun spin on the traditional pancakes we all love. πŸ™‚

I didn’t even know it was “World Chocolate Day,” but I had a mocha earlier (does that count!? ;)) and might finish the day off with a tiny piece of the leftover s’mores cheesecake. πŸ™‚

Thanks, Rissi! It’s funny, I used to hate pancakes and then a year or so back I started loving them. Now I make ones like this recipe… πŸ˜‰

A mocha totally counts! You were celebrating and you didn’t even know it. Haha! Now that you mention that s’mores cheesecake – wow, that really looked good. Might do something like that or some kind of s’mores bar before the summer is out.
