Fudgy Flux Brownies (vegan & refined sugar free)

Have you ever tried cold brewed coffee? It’s…amazing. Strong. Tastes like a Starbucks Macchiato.

Trust me when I say it’s very, very dangerous. Like you can’t stop drinking it. Then you spend you’re nights dancing around your bed like a crazy person with insomnia. 

At least I do.

My mom got some of this delicious coffee from Flux Coffee. It’s cold brewed organic coffee and has only 2 ingredients…organic coffee and water. I usually have it with a touch of creamer and ice…but it’s also amazing for baking. You should check them out!

This is my mom’s recipe for Fudgy Flux Brownies. She’s made us these a couple times…and boy are they good. Fudgy and soft, these brownies are for serious chocolate lovers.

Plus, they’re vegan. And have no refined sugars.

Yep.

Fudgy Flux Brownies

Ingredients 

2 cups flour (you can use all-purpose, wheat, or spelt)
1 cup Dutch cocoa powder
1 1/2 TB baking powder 
pinch of sea salt 
1/4 cup coconut oil  
1/4 cup unsweetened applesauce
1 cup pure maple syrup 
1/2 cup agave nectar  
1/2 cup Flux Coffee cold brewed coffee
1/2 cup unsweetened almond milk 
1 cup vegan Enjoy Life mini chocolate chips 

Directions 

Line a 13×9″ baking pan with parchment paper or grease with a healthy oil spray.

Sift the flour, cocoa, baking powder & salt. 

In another bowl, combine all the wet ingredients. Pour wet ingredients into dry ingredients. Combine but don’t over mix. 

Pour half batter into prepared pan. Sprinkle half of chocolate chips on top. Then pour remaining batter in pan. Sprinkle with remaining chocolate chips. 

Bake in preheated 350 degrees oven for 25-30 minutes. Or until toothpick still has a bit of chocolate when you test the cake. Cool completely before cutting.

    Do u think almond flour would work for theses brownies?

      I don’t see why not! It will probably just take on a different texture and you should just keep an eye on how long it bakes. Hope it turns out okay. Good luck! 🙂
