Eggnog Sugar Cookies

Have some leftover eggnog from the holidays? This is a great way to use it! These eggnog sugar cookies are delicious with a soft center, chewy outside, and a little spice. A little nutmeg and cinnamon make the eggnog flavor really shine. If you like eggnog, you will love these cookies.

I baked a few batches of these for the holidays and everyone loved them– especially my little sister. Hope you enjoy! 🙂

Serves: 24 cookies
Ingredients
  • ½ cup (1 stick) butter
  • ¼ cup coconut oil
  • 1 cup plus 2 TB sugar
  • ¼ cup eggnog
  • 1 egg
  • 1¼ tsp vanilla
  • 2½ cups all-purpose flour
  • ¼ tsp salt
  • 1 tsp baking soda
  • ¼ tsp cream of tartar
  • ¾ tsp cinnamon
  • ½ tsp pumpkin pie spice
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
Instructions
  1. Cream butter, coconut oil, and 1 cup of the sugar together for 5 minutes, or until light and fluffy. While the butter is mixing, whisk together the dry ingredients and set aside.
  2. Add the eggnog, egg, and vanilla and beat until well combined.
  3. Add the dry ingredients to the wet ingredients and mix until smooth.
  4. Roll dough into balls, then into a bowl with 2 TB granulated sugar. Place on cookie sheet covered with parchment paper or a silicon sheet.
  5. Bake at 350 degrees F for 8-10 minutes. Allow cookies for to cool for 2 minutes on your cookie sheet, then move to a cooling rack to finish cooling.
