I love chocolate. Like, I am a jump-up-and-down crazy person chocolate-lover. I had such a craving for chocolate yesterday night, but I still have 13 pounds to go before I reach my weight loss goal…so I decided to make some Raw Fudge Brownies with Chocolate Ganache Frosting and it happens to be vegan, sugar-free, quick, satisfying, and healthy while still tasting the chocolate-y goodness!
Raw Fudge Brownies with Chocolate Ganache Frosting
Makes an 8 x 8 pan of brownies
Before frosting.
After frosting. At this point I pretty much wanted to just go at it with a fork. But I restrained myself. Except…well…some of the frosting didn’t exactly make it onto the brownies.

Ingredients
Fudge Brownie-
1 cup pecans or walnuts (I used a mix of both!)
1 cup oats, ground into a flour
1 1/2 cups of dates, at room temperature
6 T. cocoa powder
1/2 t. salt
2 T. water (I had to add a little bit more…just add until you reach that consistency you want)
Chocolate Ganache Frosting-
6 T. coconut oil, melted
3 T. maple syrup
3 T. cocoa powder (make it heaping!)
1/4 t. salt
1/2 t. pure vanilla extract
Directions
Process the pecans, walnuts, and oats until they resemble a meal.
Remove the meal, and add the dates to the processor. Process the dates until they are at a paste-like consistency. This may take a little while!
Add back in the pecan/walnut/oat meal, along with the cocoa, salt, and water. Process until well combined.
Press or spread the mix into a 8 x 8 inch pan.
Place pan in your fridge while you prepare the frosting.
For the chocolate ganache frosting, mix all the ingredients on high speed in your blender (I used my Vitamix) or food processor until smooth.
Pour and spread atop the brownies, and refrigerate until set.
