Raw White Chocolate Caramel Cheesecake

My mom loves dessert, but she gave up sweets about a year ago. I have no idea how she does it because I basically live off sugar. I mean, I do have a baking blog. That’s the excuse I use most of the time anyway when I want something sweet…haha.

One of the things my mom loves is caramel. When I wanted to make something sweet for her I did some searching and found this recipe on Nouveau Raw. I saw it and just knew I had to try it. It’s fully raw, vegan, refined sugar-free, and healthy!

Yum! Who knew you can get an amazing “cream cheesy” texture from cashews!! Well, probably a lot of people, but still. It’s incredible. Also the date caramel tastes like real caramel! I was so amazed by the fact that I can use unprocessed, wholesome foods to make treats that taste just as good (if not better) than the junky chemically processed stuff. Trust me, raw cheesecake rocks! I especially love the recipes on the Nouveau Raw site. Check it out!

My mom loved it! And the rest of the family did too. They’re not the best pictures in the world (sorry!). What I really wish I could give you is a bite of this delicious cheesecake but oh well. You’ll just have to try it yourself! πŸ™‚

Raw White Chocolate Caramel Cheesecake

 This delicious confection has a chocolate crust, white chocolate “cheesecake”, chocolate ganache, and date caramel. OMG.
 I didn’t wait for it to fully set (too impatient) but this slice was still amazing.

    Hmm… thanks for sharing this, Bekah! My family has tried some alternative sweeteners and different things, and we usually come back to plain old sugar because for us, that works best. I suspect part of the problem is in the baking (i.e., we don’t use alternatives correctly), however we don’t make desserts a lot so using sugar seems our best bet. πŸ™‚

      It’s great to experiment. I love using alternative sweeteners and healthy recipes but I also love making full fat full sugar stuff too. πŸ˜‰ And if you’re not eating it all day every day, there’s nothing wrong with a little sugar. Whatever works for you, right? πŸ™‚

      Definitely! I think it’s fine to try using new things and am all for alternatives that are meant to be healthier however, we’ve found it just works best to use sugar and yeah, for the amount of baking we do, it’s okay. We may just be using alternatives wrong, too – it takes practice to get them right because they’re different than traditional baking ingredients. πŸ™‚
