Snickerdoodle Cookie Bars with Pumpkin Cream Cheese Frosting | www.willbakeforbooks.comI know, I am quite late to the pumpkin train this year. Usually I have about five pumpkin recipes whipped up by this time and my family’s already sick of it. Instead, my sisters have been begging me for pumpkin goodies these past couple weeks! I just haven’t really been inspired lately, I guess. But thanks to the suggestions from some of my Instagram buddies, I have lots of pumpkin baking plans. Starting with these cinnamony cookie bars with pumpkin cheesecake-inspired frosting!Snickerdoodle Cookie Bars with Pumpkin Cream Cheese Frosting | www.willbakeforbooks.comI got a thumbs up from the fam on this recipe. Even my dad who doesn’t love pumpkin said it was yummy. The “snickerdoodle” bottom layer is really cinnamon-y, so if you don’t like cinnamon all that much I would definitely cut it in half. But if you love cinnamon (like me!) then this should be perfect for you. The pumpkin is light yet distinct in the frosting, because it’s unbaked you can really taste it. Mixed with the cream cheese and some vanilla and sugar—delicioso!

Cinnamon-y cookie bars with pumpkin cheesecake-inspired frosting!

Ingredients
  • SNICKERDOODLE BAR:
  • 1⅓ cup all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking powder
  • 2 tsp cinnamon
  • ¼ cup (1/2 stick) salted butter, softened
  • ¼ cup + 2 tbsp cup white sugar
  • 2 tbsp powdered sugar
  • 1 tsp vanilla
  • 1 egg
  • 2 tbsp sour cream
  • PUMPKIN CREAM CHEESE FROSTING:
  • ¼ cup (1/2 stick) salted butter, softened
  • 2 oz. cream cheese, softened
  • 3 tbsp pumpkin puree
  • 1 cup powdered sugar
  • ½ tsp vanilla
Instructions
  1. Preheat oven to 350 degrees F. Whisk together flour, salt, baking powder, and cinnamon in a medium sized bowl and set aside.
  2. With a mixer combine butter and sugars until fluffy (about 3 minutes). Pour in vanilla, eggs and sour cream and mix until combined. Then pour dry ingredients in this bowl and stir again until combined.
  3. Place mixture in a buttered 8x8 greased/lined pan. Bake for 12-14 minutes or until just set and lightly browned. Don't overcook!
  4. For frosting, combine butter, cream cheese, and pumpkin in large bowl and beat with a mixer for 2 minutes, or until fluffy. Add powdered sugar and vanilla and beat again. Top bars with frosting and ice with piping bag if desired! Enjoy. πŸ™‚

    I’m kind of obsessed with baking fall things – apple, pumpkin, spices, so this would be a fun recipe to try! I think my next thing will either be something apple or something cheesecake with pumpkin. πŸ™‚

    i’m torn between wanting summery fruity things right now and PUMPKIN. idk when these are happening, but it will some time between now and fall.

      Oh my goodness, same Heather! I love the fruity, summery desserts but at the same time I love apple pies, cranberry cakes, and pumpkin things. Maybe some kind of combination of pumpkin and a summer fruit will be good?? I’ll explore that idea further… Hehe πŸ™‚ Thanks so much for stopping by my blog!
